A Week of Picnic – Hosted by the Mc Cranky Girls – Zucchini Slice

This is a great slice to take on your next picnic, you can make it the night before and eat it cold or make it in the morning of your picnic and eat it warm. Mum always made this for picnics and its been very popular in our family for about 20 years.

Zucchini Slice

375g zucchini
1 large onion
3 rashers of bacon
1 cup of grated cheese
1 cup self-raising flour
1/2 cup vegetable oil
5 eggs
salt and pepper

Grate unpeeled zucchini, finely chopped onion and bacon.
Combine zucchini, onion, bacon, cheese, sifted flour, oil, and lightly beaten eggs, add salt and pepper to taste.
Pour into a well greased tin of about 16x26cm, put into the oven at 180 degrees for 30 to 40 minutes you’ll know its ready when its brown on top.

We like to put some cheese on top as well and if you’re a vegetarian leave out the bacon (it still tastes delicious)
