Pips’s Really Very Best Cauliflower Salad, OMG YUM.
Serves 4 people or 2 really hungry people
you need:
1 small cauliflower, cut into small pieces
1 handful of snow pea sprouts
1 cups of cooked brown rice (warmed up so it’s soft!)
1 cup of corn kernels (cooked fresh ones or canned)
1 tps coriander
1/2 tsp cumin
a tiny bit of chilli powder (not too much!)
salt and pepper
a good slosh of olive oil
1 lemon
some fresh herbs (parsley or mint!)
a handful of almonds or walnuts
1/4 cup of nice Greek yogurt
a cuppla spoonfuls of Kasundi or spicy tomato/chilli type relish
let’s make it:
Pile the cauliflower onto a baking tray and add the olive oil, cumin, coriander and some salt and pepper. Toss well and roast for 15 minutes in a 400 degree oven. That’s done. Great!
next:
On a serving platter (or in individual bowls):
Tumble the snow pea shoots
Tip the now-soft brown rice on top, making it all look nice and rustic and well spread out, messy style
Add the corn on top of that, spread it about with love
Pile the now-cooked cauliflower on top of that, how good does it look?!
Plonk a couple of spoonfuls of Kasundi or other spicy chutney/sauce on top
Now plonk a couple of spoonfuls of yogurt on too
Season with salt and pepper
Scatter with fresh herbs and nuts
Add a squeeze of lime
Eat it up!!
Variation: Add grilled chicken or tofu for extra oomph!
