Secondly – this is how to make potato curry in a bag – while you sit in front of the tv smugly watching the Olympics or some other drivel.
POTATO CURRY IN A BAG
1 LARGE oven bag
1 tbsp curry paste
1 finely sliced onion
4 whole cloves of garlic
1 tbsp fresh ginger, grated finely
1 tbsp olive oil
1/2 cup of stock of your choice
1 kg of peeled roughly chopped potatoes
salt and pepper
slosh of soy
Add all ingredients to bag. Mix up with gusto (without spilling). Pierce a couple of holes in bag to prevent explosion. Put into 350 oven for 45 minutes. Eat it up.
You can also add carrot or sweet potato to the mix. And a small tin of coconut milk might be good too.
