My kids LOVE burgers. I’ve been cooking them a lot. I have not been eating them a lot, because I am on a low-calorie kick at the moment. The kids, however, are not. They have been eating these super frequently and they love them. Maybe you or the people you cook for will love them too?!
Pippy Burgers
1kg of lean beef mince
1 onion, sliced
2/3 cup of breadcrumbs
150g of haloumi
1 egg
1 tsp of paprika
1/2 tsp of dried oregano
1 tsp of cumin
a good slosh or two of tabasco
a good slosh of Worcestershire sauce (Lee & Perrins is best!)
salt and pepper – a healthy dose
If you have a food processor, throw the onion and haloumi and breadcrumbs (or hunks of bread if you don’t have breadcrumbs!) in and pulse until it’s quite fine and well processed. Tip into a big bowl. (If you don’t have a food processor, dice the onion very finely and grate the haloumi finely too. Then mix the grated things with the breadcrumbs.)
Mix the processed mix with the rest of the ingredients, massaging it together with your hands until it’s well mixed. Rest this mix for half an hour or so. Have a cup of tea, wash some salad leaves, listen to the radio…
When you’re ready, form the mix into burgers (about 3/4 inch thick – and as big as your bun, or a titch bigger) : You should get about 10. (You can freeze or refrigerate the ones you don’t need between sheets of baking paper.)
Cook in a pan with some olive oil over a medium heat (about 4 minutes for the first side, 3 for the second) and then put into the oven to keep warm while you cook fries or make a salad or do both.
Other notes:
Good served in a grainy bun with aioli, avocado, beetroot, swiss cheese, rocket/spinach and tomato. The boys like bacon on theirs too. One of them likes pineapple, even. They like the whole burger and fries thing, but we just use frozen French Fries and shallow fry in canola oil. Very good with chilli sauce, too!
