If you do, you should make this really yummy iced bun.
It’s just the thing for late afternoon happiness, esp with a nice cup of tea!

Adapted from Ambrosia’s Hot Cross Bun recipe.
For the bun
2 3/4 cups of plain flour
1 7g sachet of yeast
1/2 cup of caster sugar
2 eggs
1/4 cup of warm milk (not hot!)
150g of butter, cut into cubes
a pinch of salt
a slosh of vanilla essence
1/3 cup of mixed peel
1/3 cup of raisins (or mix raisins & sultana!)
1 tsp of cinnamon (or add some mixed spice/ginger too!)
For the icing
1 cup of sifted icing sugar
1 tablespoon of milk
In a mixer mix the flour, yeast, salt and sugar until combined. Add the eggs, vanilla and butter. Beat well. Then add the milk. Beat until well combined (about 5 minutes). Scrape into a buttered bowl, cover with plastic wrap and allow to rise for an hour.
Turn the dough out onto a floured surface and knead the fruit and cinnamon in. Plonk back into a bowl and allow to rise for another hour. (Preheat your oven after 45 mins – see below!)
Turn gently onto a greased tray. Brush with egg wash (a beaten egg and a slosh of milk)
Place in a hot oven (380 degrees F) and cook for around 30 minutes or until golden and springy (the middle can take time to cook, so be patient!)
Allow your bun to cool and then ice it, if you want to!
To make the icing
Beat the icing sugar with the milk to make a smooth, stiff icing. Add more icing sugar if it’s too runny. Spread onto the bun and sprinkle with cinnamon if that sounds nice to you!
