Hello

Cherry Cake…. Just For You….

June 1, 2009

Cherry Cake

2 cups of flour
3 tsp baking powder
a pinch of salt
100 g butter
1 cup of sugar PLUS 1 extra tablespoon of sugar
1 tsp vanilla essence
2 eggs
1 cup of milk
1 cup of frozen or fresh pitted cherries
rind of a lemon

Cream the butter and the sugar until pale. Add the eggs, one at a time, and then the lemon rind, salt and the vanilla. Beat in the sifted together flour and baking powder, and the milk alternately until just combined. Pour into a well greased 7″ tin and dot with the cherries, then sprinkle with the extra sugar. Bake for 40 minutes in a medium/moderate oven – or until a skewer in the centre comes out clean. Enjoy! Yum!

I think I cooked this one a bit long… it was a tiny bit gooey in the centre after 40mins… but I’ll just be sure to douse it with lots of cream and I think it’ll be fine…. perhaps I might even warm it to serve?!

Hi, love your site. I was just thinking today that there isn't enough cherry baked goods. Love this cake.

Citrus Daisy – hope your raspberry cake goes down a treat with everyone, especially the 3 year old!

Verity, thanks for the kind words and I have not used dried cherries, but cranberries are good dried, aren’t they?!

Kuka-Owl! Thank you! I’ll have a piece for you!

Cat Rabbit – hello special gal! I look forward to seeing you soon! I will make another cake, I think!

    Oh Pip, this looks delicious!
I think warmed with cream would be just the ticket.

I can’t wait til I can move to Melbourne and attend Brown Owls with baked cakes, what a treat!

Lovely lovely blog, congratulations on all of your success, it is very well deserved!

    xx

    Hi Pip,

Just dropped in to say I love your blog, oh and the book too! This cake made me think of dried cherries, and how I can never find them. Did you ever have a use for them?

    All the best, Verity.

Thanks for the inspiration Pip. I have been thinking whilst I sew about the type of cake I will make my 3 yo to be – tomorrow is the big day. The Brief is a Pink Cake mummy. So I saw your cake and thought hmmm good but with raspberries. Clicked on the adapted from link and what did I find. Excellent. A couple of drops of pink food colouring in the mixture will give us a pink cake, with raspberries and pink icing on top…. Brief will be met and the attending adults will enjoy the pink, raspberry cake. Enjoy your cherry cake!
