Yesterday we made pancakes for breakfast. I like to make pancakes, but I don’t usually eat them, ya know? I’m not much of a desserty sweet person, generally. Only for a treat.  Yes.
I was cooking these pancakes for Ari and Max yesterday morning (via the Nigella pancake recipe) when something strange happened.  The buttery sweet smell of them overwhelmed me.  I really HAD to have one.  I have not eaten a pancake in about ten years, mind you. Isn’t that weird?  What’s with the pancake strike?
I really wanted lemon and sugar on top of my pancake, but we didn’t have any lemons. (Don’t you love the smell of lemon and sugar together?!)  What we did have was homemade yoghurt and homemade apricot jam,  thanks to A Year Of Good Things. That seemed like a great idea. Yep.  When I tasted it I realised it was, in fact, an outstanding idea. So yum.  Success!  Delish. Mmmm.

    Yum, nice pics! Yeah its been way to long for me, why? I love Lemon and Agave nectar … healthier option and when I run out of Lemons, I have my Young Living Essential Oil, you can cook with these they are awesome……

    Pancakes are the best. I am with you lemon and sugar do smell nice. Cinnamon sugar also tastes nice on pancakes so does lemon butter. Mmmm… I will makes pancakes tomorrow:)

    I do indeed like the smell of lemon and sugar and can't understand why people want banana and chocolate, or maple syrup, or other sickeningly sweet things of their pancakes. Simple flat pancakes – none of this fluffy stuff – with lemon and sugar. Mmmmmmm.

    My pancake recipe came from the how it all vegan cookbook and I'm pretty sure it's called perfect pancakes, which they are!
    It has 2 cups of flour, 1 tsp baking powder, 1 tsp bicarb, 2 cups of soy milk (or regular milk), and 2 tbsp of oil.
    Sometimes I make a double batch and freeze half so we can have pancakes all week!

    10 years is far too long between Pancakes Pip. I'm glad you ended the drought.
    And yes I totally agree with your statement there, remember to eat pancakes.
    and on that note, i may need to have pancakes tomorrow.

    love love love pancakes. When i was old enough i used to make them most days after school for afternoon tea.Now I Have them every sunday with the kids….3 for me and 2 each for them. I have used nigella's recipe which is good, but Tessa Kiros's recipe (apples for jam book) is the best. I believe it is the perfect pancake recipe. you have to sit the batter for 30 mins which i love as i make the mixture then run around making beds having shower making pot of tea. I make the kids first and then the next 3 are all mine…complete with tea and weekend australian crossword/sudoku. lemon and sugar….love em.

    Love love love pancakes! Have to be the really thin ones and just lemon and sugar is fine. I usually only make them on Pancake Day though … Vic x

    Pancakes cooked in butter (so they get a nice crispy crunchy edge) with honey. The mix has to be not-too-thick not-too-thin but juuuuuuuuust right! Yours sound lovely though!

    I love pancakes with bacon & maple syrup but if I make pikelets it's always butter & sugar….so yum!

    Pancakes with bananas, vanilla soy ice cream and lots of agave syrup are best.
