:: Tell Me About Chicken Soup…

Is it easier to get sick when it’s windy? I think it’s a proven fact that germs are blowing around more on windy days, right?  I can picture them… they are like little nasty-faces looking for likely victims.  Possibly I was a likely victim because I have been working a bit too hard in the last month… and my immunity might be down, even though I’ve been super careful to take my vitamins and exercise regularly and eat well, I have been working most weekends and weekdays.  I am a bit tired out as a result. Possibly part and parcel of launching a book and putting your face everywhere, I think.  Anyhoo, the nasty-face germ got me and I started feeling super peaky last night. I’m in bed today feeling a bit sad and sorry, but determined to feel better soon.
Chicken soup is a good remedy for this kinda thing, methinks. Are you the soupy kind?   I like to make Sophie Dahl’s chicken soup with the extra chicken-y croutons… or sometimes I make Bill Granger’s quick chicken soup with the parsnip in it.  But do YOU have a favourite chicken soup recipe?  And if you are a vegetarian, what’s your version of the get-well elixir?  
Are you chicken soup with dumplings? Are you pho? Are you simple broth? Or do you need lots of vegetables?  Do you start afresh? Or do you like to use a BBQ chicken?  Do you have a family recipe?  Or do you have your own secret soup?  What are your chicken thoughts?

    we love giant dumplings! (the wind can make you sick! depending on your ayurvedic dosha, it can really mess with you!)

    As a vego – definitely miso soup! Miso is an amazing detoxer…. big brothy bowls of miso with fresh chopped shallots, tofu, shiitake mushrooms and a little bit of buckwheat noodle or rice is my favourite healing soup!!

    Last winter got laryngitis and could not talk for a week. every day I got up and I still couldn't talk!Then a couple of friends dragged me out for pho and I came home with this amazing inner glow. I'm sure its what finally made me better!

    I hope you kick the lurgy soon! I used to love matzoh balls in chicken broth when I was sick till I had to give up gluten. Do try them they are soooo lovely.

    I have a chicken soup recipe, and I'm not quite sure where I found it, but it was probably from Campbell's soup, do you have Campbell's soup, if not I'm sure you can find something similar.
    Anyhoo, it's for your crockpot. So if your sneezy, and qweezy, you can blindly throw it all in and wait a bit
    It' goes as follows
    1 can condensed cream of chicken
    1 can condensed cream of mushroom
    5 cups of water
    2 cups chopped cooked chicken
    1 cup of peas (or whatever veggie you wish that cooks well)
    2 cups baby carrots or chopped carrots
    KEY INGREDIANT HERE! 1 teaspoon (I do more) of GARLIC PEPPER SEASONING. It really brings so much flavor.
    1 and 1/2 cups dried egg noodles.
    Pour cans of soup in crockpot, stir in water and whisk till smooth.
    Stir in chicken, carrots, peas, and pepper.
    Cover and cook on low for 8-10 hours or high heat for 4-5 hours.
    When the time is done put the egg noodles in and cover and cook on high for 20-30 minutes, until tender.

    I know I have given all american measurments sorry.
    It's called Creamy Chicken Noodle Soup. It's a family fave, and I love to serve it with a nice crusty dutch oven bread.

    Chicken soup is just about a weekly occurrence out ours. Mainly because Mst 3.5 asks for it whenever I ask him what he'd like for dinner.

    He calls it Chicken Noodle Soup; I call it Hidey, Hidey Chicken Noodle Soup.

    It's my secret way of getting vegies into him. I simply choose vegies that I have on hand (anything – capsicum, carrot, zucchini, parsnip, pumpkin, mushrooms…) and food process them up. Add them to a pot with some ginger, garlic, salt & pepper and cook through a little bit.

    Then I add some Massel salt reduced chicken stock (which is gluten free just like me), chicken strips, oyster & soy sauce, some corn kernels or creamed corn and sometimes some normally chopped veg to show that vegies are cool and then heat through until the chicken is cooked.

    Then I add rice noodles – nice thick ones – and serve.

    Just keep tasting it until you like the flavour.

    Never fails to bring a smile to the face of the small boy and I secretly congratulate myself for getting much needed vegies into him.

    I'm definitely a chicken and vegie soup girl when I get sick – roast chicken from the BBQ chicken shop, chicken stock out of a carton and vegies through the blender.

    Agh Pip, hope it's a quick departure type of lurgy.

    Ideally I make a big batch of chicken-licken deliciousness and freeze it so that when I'm feeling truly grim it's a simple matter of [someone else] defrosting it for me.

    My recipe entails using a whole chook [preferably organic] and sealing it in a large saucepan with some onion and garlic and then covering with good quality stock, heaps of ginger, chillies and fresh veges cut into cubes. I let it boil away filling the house with its amazing smell until I can resist it no longer.

    After shredding the chicken, my favourite way to serve it is with angel hair noodles and a big squeeze of lemon juice – hmmmmm, methinks I need to make a batch tomorrow.

    Biggest of hugs for a speedy recovery.

    I loooooove chicken noodle soup- its a winter staple.
    I fry up some chicken, usually breast, then fry some onions, celery, carrots & garlic. Chuck in some egg noodles, cover with chicken stock ( store bought- I am yet to cook my own stock but really must one day)& bring it to the boil, turn it down to simmer 7 throw the chicken back in, simmer for about 10-25 mins & wa-la!!! A delish chicken noodle soup, always served with buttery toast fingers.

    P.S this has made me want chicken noodle soup even though it is 29 degrees in Perth today…..

    My sister found this recipe. My mum, my sisters and I make it all the time because it is simple, nourishing and delish. We call it Magic Soup.

    I KNOW! I can't even eat a bit of toast. My stomach is in KNOTS. Ugh. Hopefully by tomorrow I'll feel better and someone will make me soup… maybe…!

    when I'm sick I can't be bothered making chicken soup, even though I do make a meeean chicken soup. I usually only eat marmite toast and cups of tea when I'm sick! Hope you feel better soon!! xx
