Sage Jelly
2 cups of apple juice
1 1/2 cups of sugar
Juice of 2 lemons
1 small handful of sage
some extra sage
In a medium sized pot, put the apple juice, sugar, lemon juice and handful of sage. Sitr and lightly crush the sage to extract the flavour, whilst bringing the whole lot to the boil. Allow to boil freely until it will set. Pour into sterile jars and add a sage leaf to each jar for extra prettiness. To serve with Meat or Poultry.
