Have you ever made these cookies? They are really yum. This is a recipe I have been using for 20 zillion years. It’s the one that I had published in the Frankie Afternoon Tea book (and it’s also in my book Sew La Tea Do!) They are tried and true and here for you. *titter*
I made a bunch of these yesterday and they went down a treat with the gang of moi. I hope your gang likes them too!
Pip’s Best Ever Choc Chip Cookies
You will need:
125g salted butter
1/2 cup brown sugar
1/2 cup white sugar
2 small eggs
1 3/4 cups of self raising flour
a drop or two of vanilla essence
250g (or thereabouts) of choc chips
Preheat oven to 160C.
To make them:
I use an electric mixer.
Cream the butter and sugars until pale-ish. Beat in the eggs and the vanilla. Next beat in the sifted flour until mixed through. Now add the chocolate chips and mix again. Roll into small balls (about a teaspoon’s worth of dough) and plonk onto a lined baking tray. Bake for 10 to 12 minutes or until a little bit golden.
If you want them chewy, cook until firm to touch, but NOT brown. They’ll crisp up as they cool.

I love your recipe and I make them as often as I can and share them with an many people as I can! Though my oven is cruddy and I end up with burnt bottoms sometimes. recently I attended a bake swap and while everyone else made beautiful cakes and what not, your choc chips cookies were my choice and they went down a treat!
