How To Make Famous People Coconut Ice

Sometimes I make coconut ice for famous people.

Once, it was for Chris Isaak.  Another time it was for Melissa McCarthy and Ben Falcone. You can hear more about that on the radio or online today at 2pm Melbourne time.

I will tell you more about the amazing Melissa McCarthy aka Sookie St James experience (and her adorable husband Ben) next up. For now, here is the famous Coconut Ice… appreciated by many (…but not all!)


Delicious and Moist Famous People Coconut Ice

You need:
2.5 cups sifted pure icing sugar
1/2 teaspoon cream of tartar
395g tin of condensed milk
a splash of vanilla extract
3.5 cups desiccated coconut
a few drops pink food colouring

Latex gloves for kneading sticky mix
Tiny jar to use as make-shift rolling pin

How to make it:
Grease and line a 20cm square tin or plastic container. (I use a plastic container with a lid!)

Mix icing sugar, cream of tartar, condensed milk and vanilla together.
Add coconut and knead together. (I use latex gloves when I do this, because hygiene!)
When it’s mixed together beautifully, split the mix into two bowls.
Add pink colouring to one bowl and knead it in really well until it’s evenly mixed and there is no marbling.
Press the pink mix into your tin/container evenly (I use a little jar to ‘roll’ it as flat as possible.)
Now press the white coconut mix on top – again, making it nice and even.
Let it set in the fridge for a couple of hours and then cut into small squares (it’s very sweet!)
