Friendly Feel-Good Soup

I am a bit obsessed with this soup at the moment. It has the ability to not only satisfy my hunger, it also makes me feel really good and warm and virtuous and healthy and calm.

It’s pretty much a crunchy hug in a bowl of soup. With extra vitamins and magical powers and things. Like, if soup was your best friend, it would look like this. So colourful, no?!

If you want to try a thing I like. If soup is your jam. If the best-friend soup experience sounds like something you would like to have  – then this is the recipe for you.

Let a meal hug you from within. You will be glad you did.

Friendly Feel-Good Soup

Makes 6 generous serves

First: Put on a pleasing podcast or some nice music for the chopping bit. That’s part of it. It’s an actual ingredient. Truly.

To Add

6 small carrots – sliced finely (peel if you like!)
2 onions – diced as finely as you can manage
3 celery stalks – diced
4 stems of silver beet – chopped as finely as you can manage
200g of mushrooms – the more dark & flavoursome, the better – chopped finely-ish
3 fresh tomatoes – chopped as per above
2 cloves of garlic – whole
1 inch piece of fresh turmeric, sliced into 2 or 3 big bits – or 1 teaspoon of turmeric powder
1 inch pice of ginger, sliced into 3
a pinch of cayenne pepper
salt & freshly ground black pepper

garnish – a few sprigs of seasonal fresh herb/s

Optional: I add 1.5 teaspoons of Vegeta powder OR a Massel vegetable stock cube, but you can leave that out if you don’t like those things, it just won’t taste as full flavoured. (Or you could add your preferred homemade/commercial stock instead of water.)

To Do

Put all ingredients in a large pot – BUT keep half the silver beet aside (and the herbs too!)
Add 2.5 litres of hot water
Simmer for 35 minutes or until all the veggies are softened. Add a bit more water if need be – you want it to be veggies bobbing about in clear-ish, yellow broth – not a thick soup.
Next – Add the rest of the silver beet, some herby sprigs and cracked black pepper.
Season to taste and serve. (Fish out the big hunks of ginger/garlic/turmeric if they end up in a bowl and return to pot to continue infusing!)

ALSO: You could also squeeze a bit of lemon juice in at the end, if that takes your fancy! Or tip in a can of chickpeas or beans if you want to include something more starchy or if there are people in your house that need carbs to ‘make it a meal’.

    Just made this today Pip and it is divine. I know it’s a hot one here in Melbourne but I can’t stop eating it!

    Wow this soup is amazing, real comfort food. I didn’t have any chard so added shredded cabbage, thank you it is souper!

    I am making this for dinner tonight with homemade croutons! I had to look up silver beet and was happy to see that it is chard. I have some kale in the fridge so I will chuck that in. I will let you know how we like it.
