Hardie Grant sent me this ace book to share with you. How nice of them, right? Thanks HG!

Eat This My Friend is a beautiful illustrated vegetarian cookbook by Jade O’Donahoo, who writes a blog of the same name, too.

Its ace pages are packed with delicious, wholesome and tasty things to cook and share with your favourite people.

Here are a tiny few that caught my eye:

I have actually met the cute and clever lady who made this book and I reckon anything she cooks is a really good meal time (or anytime) idea.

If you’ve been to Melbourne or live in Melbourne, you might have even been to the cafe that Jade (and Kate!) started in the CBD?

It’s called Switchboard and is under the Manchester Unity building. They opened it when our city was just starting to begin utilising unconventional spaces for awesome things, so they were part of that genius movement.

(They sold it ages ago, so don’t go there trying to get Jade to sign your book or butter your muffin or anything, okay?! It could be awkward.)

    I’m so glad I’m not the only one who loves Brussels sprouts! They are seriously awesome and I could eat them every day. Oh and have you seen how they grow – how cool is that!

    Wow, so hard to choose, all vegetables are my friends, but currently okra because roasted it’s amazing and in curries it’s awesome, and because it’s one of the underdogs of the vegetable world!

    Avocado! It can be eaten in so many ways-in a toastie, on pizza, or my personal favourite; sliced on top of olive ciabatta with caviar dip.

    I love Brussel sprouts – they are much maligned by those who have not experienced the joy of eating them cooked well! Lightly steamed with the outer leaves taken off and then tossed with some bacon and red onion that has been sautéed in balsamic vinegar and seed mustard and then baked with grated melted cheese mix!
    Superb!

    It’s unusual I know but i love onions (even through they make me cry) favorite dishes are onion bhajis, caramelized onions or my own invention with is an onion chopped halfheartedly, cooked in oil with red wine and severed with pasta. YUM

    I keep reading about this beautiful book.
    Beans! When I think about beans, I think about my family in Greece who lived off the land – stories of growing beans upon beans in summer to dry and store to cook and eat in winter. They were the staple of so many meals, cooked in many ways and eaten at all times of the day. Yay for Beans!

    My favourite vegetable is broccoli. There is something appealing in it, to do with both taste and texture. I like the idea of eating a flower. I make this yummy salad with broccoli, seeds and cranberries. Soul food.

    Well, being of Irish parents I just can’t go past the Praties, any kind cooked in any way. The basic in my vegetarian diet. Mind you, when I get a bit fancy the humble mushroom and a bit of spinach or silver beet are pretty special as well. mmmmmm

    Sweet potato is my fave! So versatile – mash, wedges, fries! My favourite is to get the left over roast sweet potato and put it in a jaffle with cheese and dip into kewpie mayo! Weird but magically delicious!

    Despite its bad rep as the most boring of vegetables I LOVE cabbage. It is inexpensive and readily available and super versatile. It takes on so much flavour but also has its own flavour. Love that it is great pickled, steamed, sauteed, fried, blanched and even raw. I also love the sound of it: cabbage. It sounds like a flower to me.

    This is actually hard to do when you really stop and think what is my favourite vege but after much reflection I think I’m going to go with Broccoli, controversial maybe you either love it or not but I think it’s a super versatile vege, I love the taste, especially when it’s just cooked so a little al dente still, it’s good raw with some hummus, in stirfry and always features on the nights of meat & 3 vege. It also a staple in one of my favourite dinners which is Chicken & Broccoli bake. I also whizz it up to go in savoury muffins & slice too. Yep it’s tough but Broccoli wins for me. 🙂

    Ok so probs kinda boring but I love me some pumpkin. I thought it was disgusting as a kid, boring my dear old mums electric fry pan ‘roast’ pumpkin until out of sheer politeness I ate proper, roasted, unctuous, sweet orangey goodness served up by a distant old aunt…..Tgen I married a man and produced two kids who hate it!!! So lotsa lunchtime roast pumpkin salads my life now is ?

    I like unions the most. They are delicious with almost everything. In soup, in sauses, red union in a salad. And there are so many varietys.

    Cucumber…. because it’s crunchy, juicy and a veg that doesn’t need any preparation. I’m not an enthusiastic cook, although I love food. So this book would clearly not be for me, but my friend… a vegetarian and more enthusiastic in the kitchen!

    Sweet Potato! It’s as versatile as Potato, but with even more flavour. I especially love it roasted and cripsy, or grated then paired with Zucchini as Fritters.

    Really tough call to name just one favourite 🙁 But! I’ll go with potatoes. You can serve them hot or cold, they accompany most other dishes beautifully or are a meal just on their own. There are lots of different varieties for different dishes, they’re in season all year round and there is absolutely nothing better than a baked spud at the end of a hard day 🙂

    I have this conversation so often and always come back to onions. How can something be sweet and savoury at the same time?! They are SO delicious, not to mention versatile! Caramelised, deep-fried, roasted, as a soup, as a tart, in a salad, as a bhaji – hell, I basically include them in every meal! Onions all the way.

    Cauliflower fo sure!! It’s the perfect accompaniment for my other love…cheese!

    Cauliflower and blue cheese soup – the list goes on!
    So excited for this book! I’ve been vego for 15 years and could def do with some new recipies for inspiration 🙂

    Corn is by far my favourite veggie of all time! I love everything about!!!! Not to mention its spin offs – corn chips, polenta, popcorn, corn bread, corn tortillas, creamed corn (have you tried the avocado on toast with smokey creamed corn at Mixed Business?) corn fritters, corn…flour? haha! No wait, for spongecakes!!!
    Hands down best vegetable ever!

    Zucchini, all day everyday.
    I used to hate them when I was little, because I only ever had them steamed, squishy and feeling like mush in my mouth. These days, I have them raw in salads, grated in all manner of cooked delights (especially when there’s a picky man in your life!), baked into sweet treats and when I’m feeling particularly “hipster” I’ll even have them spiralised in place of noodles or pasta.
    Who would have thought something once so icky could now be so delishy?! Thanks for the opportunity to enter Pip; the book looks delightful x

    Eggplants are the most delicious veg! So fleshy, filling and versatile! Plus they even satisfy your meat-eating friends at dinner parties! My Eggplant lasagne tricks even the most dedicated meat-eater! Can’t wait to see what other gems Jade has in Eat This My Friend 🙂

      YUM. One of my faves is Claudia Roden’s Eggplant with Honey. If you have never made it, you should give it a go. I think you will LOVE it and it’s especially good the next day on crunchy sourdough. x

    This season it is all about fruit!! However, I do so love a crunchy snow pea – which is so sweet, that it’s almost like a juicy summer fruit! So yes. Snow peas it is!!

    Broccoli! Although I pronounce it broc-il-eye as that’s how my mum always said it. As a beginner cook, I find broccoli to be non intimidating- you can’t really mess it up!

    CARROT! Teaching school kids to grow their own food is my passion. Carrots is always our go to, heirloom carrots. Ar harvest time, the kids faces are the whole reason why. Squeals of delight weather the my they are straight curly or just plain crazy, and biting into a purple or white carrot just doesn’t feel real. Raw, cooked, or pressed into paper to see patterns, carrots are our favourite thing! We would love to use some of your recipies in our little school!

    Such a toughie… broccoli (I have plans of getting a tattoo in homage to the brassica), sweet potato, mushrooms, pumpkin?
    As a vegetarian for over 20 years, I think my favourite has always been the eggplant. I love that the glorious eggplant is the hero of so many delicious Asian, Middle Eastern and European dishes – it’s truely a harmonious veg!

    Pink eye potatoes! They are the bees knees of the potato world, get to cover them in a pool of butter and it seems can only be enjoyed when in Tasmania I believe. Sneaky little potato we have.

    Jerusalem artichokes – they grow in your garden like a weed, have cool tall sunflowerlike flowers, are delicious (my fav way is in a gratin with cream, lemon, thyme, breadcrumb and parsley and) parmasen top), plus they make you pass awesome farts, so the kids love to eat them. Win! Win! (unless you are travelling in a small car on a hot day after eating)

    Wow I have to choose a favourite?!
    Well don’t tell the other vegetable because I tell them I love them all equally but (whispering quietly) orange sweet potatoes are the best!!
    Roasted, steamed, mashed, or made into burgers, especially cheesy bean burgers, sweet potatoes are versatile and delicious.

    My favourite vegetable is cauliflower because it is a versatile lass! Its such a fantastic canvas both in terms of taking on different flavours and textures. Special mention to the perfection of roasted cauliflower with a tahini drizzle.

    Carrots! I’ve never met a carrot that I didn’t love. They’re good raw, they’re good cooked. Heck, they’re even good in cakes! There’s never a bad season for them, they’re just dependable and always there for you, yet so many people seem to hate them or find them boring.

    Broccolini – as a child I loved eating tiny trees and even helped my sister out by eating hers too. Now I’m all ‘grown up’ I tend to go for broccoli’s fancier relative broccolini.

    I seriously love Brussel Sprouts! I never grew up hating them because my mum is an amazing cook and would serve them up in soups and sautéed in butter (because butter makes everything better right!). My favourite way of serving them up to my family is a traditional Irish way, cooked with bacon (and butter of course) and served with Colcannon (Irish mashed potatoes) – yum! St Patty’s Day can’t come around fast enough in our household!

    Spinach!! Can be relied on to boost the greens intake- in mine or the kids’ banana smoothies, salads, pasta, sauteed with lemon and garlic, spinach goes with almost anything! Best thing is the fact that it grows prolifically in my big planter pot in the sun, all year round, for a perennial organic supply. Lucky me!

    My all time fav food is garlic. When people come within a block of my house, they say, “oh, Amy must be cooking,” because you can smell it a mile away. I always at least triple the garlic in any recipe. I make myself garlic confit to store in the fridge for a quick fix. I swear it keeps me healthy. But it’s always delicious in anything.

    Tomato ?: I ate nothing and I literally mean nothing but tomato from the age of 6 to 9, breakfast lunch dinner snakes in between , I remember Christmas tomato sandwiches …. and although my vegetable repetoir had grown I still love Tomatoes ?

    Pumpkin! More specifically, pumpkin on a pizza with goats cheese and caramelised onions. Not only because this is an utterly delicious combination but because a dear friend and I used to regularly enjoy such a feast when we were a little younger and a little more footloose and fancy free. Though it can be more difficult to coordinate catch ups these days, when I bake this combo at home I am instantly transported back to this time and I think of my buddy with much love.

    How can you go past pumpkin? It can be sweet or spicy, dessert or dinner, it can be roasted, mashed, curried, frittered, pied (is that a word? It totes should be!), sconed, hot or cold. It is everything!

    CAPSICUM for sure! Caps can potentially be an aggressive guy with so much attitude, but it’s also easy to mellow him out if you just spend the time getting to know him.
    In my house we sing a song called “Maximum Capsicum”…that’s how much I love it.

    How I love pumpkin- any way, any how. Amazing to think of all those hours I spent as a child at the table when everyone else had long gone except my long suffering dad. I wasn’t to leave until I had eaten every mouthful on my plate and how I dispised pumpkin. A bite of pumpkin with a water chaser and I would get through eventually …..until the next evening. It was a bit of a ritual really.
    Thankfully for all at my table I have cottoned on to its deliciousness and I am grateful for my poor dad’s good grace and his never once uttering “I told you so” as I sneak a bit of the orange stuff off his plate!

    Zucchini. After moving out of home I went on temporary vegetable strike due to a childhood of what I thought was vegetable overload (thanks Mum) – my favourite veggie loving friend recently helped me rekindle my love for all things vegetable by cooking a zucchini pasta veggie bolognaise.

    I would love to own a copy of “Eat This My Friend” to continue sharing the veg goodness with my favourite vegetable loving friend.

    Peas! I LOVE peas. In pasta, with roast potatoes, in curries. I wait every summer for fresh sweet peas from my father’s garden…I used to eat them frozen straight from the freezer as a kid!

    Carrots because you can eat them raw with French onion dip (the best dip ever), steamed, in a casserole or a stir fry then you can have them sweet in a moist carrot cake with cream cheese frosting – oh so yum!!

    I love potatoes because they’re like shrimp – you can do EVERYTHING with them! I love them roasted in olive oil and salt and mint and oregano so they’re all crispy outside and fluffy inside. My stars, what a good time.

    I love all veggies but cauliflower has got to be my favourite. Baked cauliflower cheese in the middle of winter = heaven. Raw cauliflower with hummus = best. Cauliflower soaking up the flavours in a curry = yes please!

    I’ve seen this book pop up a few times on Instagram. It look like something I’d really like a lot!
    I love cabbage in winter- shredded, fried with garlic & chilli.
    I love zuchinni in Summer- sliced, pan fried with garlic & the tossed with baby spinach.
    I love sweet potato ALL year round- roasted OF COURSE!!!

    I would have to say the humble brussel sprout! I love them roasted with almond slivers and coconut oil, and my almost six year old gobbles them up every time! Yummo!

    I’m gonna go with potatoes! I could (and have) eat a bowl full. We were brought up on them boiled, mashed with veggies and heaps of butter with a sausage in the middle, as home made fries with mayo, roasted, in potato salad, as gratin dauphinois – just potato everything! #CARBSFOREVER

    Oh Pip! I love ALL OF THE VEGETABLES. Unfortunately, my children love NONE OF THE VEGETABLES. I kid you not, I have been purée ing, grating and blending them into bolognaise, risottos, sauces and smoothies for years now just to get anything healthy into them. But maybe if I dished up something tasty from this book, that might change?? Let’s face it, probably not. But at least I could cook something new, fresh and vegetable-lishious for my hubs and I while the kids chow down on bolognaise (again). Please save us from blended-vege-boredom! (Oh and if I REALLY had to choose, it would be the snow-pea. Those things are so darn cute in a green and bendy way) .

    I’m really loving mushrooms at the moment. Great on toast for breakfast, in a salad for lunch and they make an awesome sauce or stroganoff for dinner.

    Mine has to be…beetroot! As a child I felt it tasted of mud but now all bets are off! I simply love it in a salad but my full time addiction has become chocolate beetroot brownies. I just can’t get enough! Anything that can be so versatile, hugely healthy & such a rad colour definitely deserves some favouritism in my book!

    Purple sweet potato is my fave, because when it is baked it becomes candy like and in potato and leek soup it adds a zing and even in mash it rocks 🙂 Mmmm vegetables!

    Cucumber! It’s the best! In drinks, in salads, on its own with soy sauce, served hot with garlic … it’s all good!

    My favourite vegetable is the potato. Such an obvious, seemingly non-sexy choice, I know, but it’s so versatile! Made into oven-baked chips, cooked with some fresh rosemary and olive oil. Mmmm… Or a nice, creamy mash with plenty of fresh, black, Silkwood pepper… Team it up with some sweet potato for a yummy frittata. Or simply boiled along with some green beans and drizzled with some olive oil and white vinegar the way my Nanno used to eat them. The choices are many. And so good! I love potatoes!

    I love most veggies but is anything as good as a spud? Baked, mashed, scalloped, chipped, hasselbacked. I love them all.

    I think it’s the yellow capsicum. When I did a residency in Scotland, at the very northern, pointy end of nowhere, fresh veg was not really a thing. Somehow yellow capsicums were one of the only things the tiny supermarket would get in! Consequently I ate them on everything!! Now every time I eat one it makes me think of that amazing time I got to do a hot glass residency in Scotland. (I still love them too!)

    I’m a spinach devotee. I pretty much eat it for breakfast, lunch and dinner. I describe myself as a dietary arsehole (vegan, gluten free, grain free, refined sugar free), but spinach is my verdant powerhouse buddy! It’s juiced, blended, diced, sautéed, roasted, wilted. The only thing I’ve yet to try is dessert spinach: I think I’ve just given myself a mission!

    I think I love zucchini the best, it is excellent on its own – sauteed in a little garlic and oil or thinly sliced raw in a salad with lemon juice. It also slides into almost any sauce or chili or curry, adding more veggie bang for your buck.

    I really love broccoli. Just a great flavour and texture, and when I found out it’s great to help keep bowel cancer, which runs in my family, at bay, I was very happy with the excuse to eat lots.

    Broccoli! So good crispy and roasted, crunchy and chopped in a salad, tender and steamed with sesame, or silky in a cheesy soup…and to think I hated it as a child!

    I love beans! Raw beans, cooked beans, beans as a dipping stick, beans with feta cheese and olive oil!! I do love beans!!

    Yay! My favourite vegetable is broccoli. Not only is it great on its own, but it’s the best in curries and saucy things! All the sauce gets soaked up by the leafy part of the broccoli and then when you bite into it, you get a dose of broccoli and a hit of curry sauce. Bam! The best 🙂

    My favourite vegetable is the eggplant because without it you wouldn’t have luscious baba ganoush, comforting moussaka or, my all time favourite, Chinese-style stuffed eggplants!

    I love parsnips! They are earthy, unusual texture and I love them baked as chips with lemon pepper – yummo!
