Eat Hello

:: A Really Simple Yummy Soup

June 16, 2014

Sometimes when I’m feeling tired, I like to make this soup. It’s an improvised version of a soup we used to have when I was a kid. It’s not my mum’s PROPER version, but it’s a red hot go at it! And it’s really yum. You can totally leave out the bacon if you are not bacon-y! It’d still be yum.

Simple Corn, Bacon and Potato Chowder
Serves six

800g corn kernels (fresh, canned or frozen!)
420g can of creamed corn
1.5 litres of low fat or full fat milk
250 grams of diced bacon
1 brown onion, diced
500g potatoes, peeled and diced
1 tablespoon of butter
salt and pepper

Optional: sliced spring onions, freshly chopped parsley

Melt the butter in a large stock pot.
Throw in the onion and cook until transparent.
Throw in the bacon and fry for about 4 minutes, stirring to prevent it from sticking.
Now add the potatoes, corn, creamed corn, 1/2 teaspoon of salt, pepper and milk.
Bring to a high simmer and then turn down and cook on a low heat (try not to let it boil) for 30 minutes (or until the potatoes are tender).

Taste and adjust seasoning. More salt? More pepper?
Let it cool down for a couple of minutes to take the too-hot edge off it.
Then add spring onions and/or parsley.

Serve to hungry punters!

Even more delicious variation: Put the bacon on an oven tray (not in the pot) with some diced, crusty bread and a knob of butter – bake for 10 minutes in a medium oven – turning bread so it doesn’t burn and toasts evenly. When the bacon is cooked nicely and the croutons are golden remove and plonk those in the chowder.
